Nourishing Rice Bowl

Grains, protein, and veggies all in one dish.  Serve for breakfast, lunch, or dinner.

Ingredients

-1 cup sushi rice, cooked

-1 piece salmon

-2 eggs, scrambled

-1/2 cucumber

-1 head of broccoli

-green onions with white bottoms and green tops sliced thinly and separated

-sesame seeds

-2 tablespoons tamari

-1 tablespoon honey

-1 tablespoon olive oil, coconut oil, or toasted sesame oil

-1 teaspoon garlic powder

-salt, pepper

*Note- I typically eyeball ingredients, so measurements in instructions might be a little off.

 

Instructions

  1. Set oven to 400 degrees F.  Place salmon in a zip lock bag.  In a small bowl, combine and whisk together tamari, honey, olive oil, garlic powder, salt and pepper.  Pour the sauce into the bag with the fish and let the salmon marinate for at 10 minutes.  Save any remaining sauce.
  2. Toss broccoli and the whites of the onions in a large bowl with remaining sauce.  Add salt and pepper, plus some extra olive oil if necessary so that broccoli is evenly coated.
  3. Line a baking sheet with tin foil.  Place the salmon and vegetables on the baking sheet and cook in the oven for 15-20 minutes, depending on the thickness of the salmon.
  4. Slice cucumbers.  In a small skillet, scramble the eggs.  Remove eggs and put in a serving dish along with some sushi rice and the cucumbers.  Add the salmon and broccoli when they’ve finished cooking.  Sprinkle with the green tops of the onions and sesame seeds. Enjoy!

Delicata Squash and Black Bean Tacos

These tacos are so delicious I nearly forgot to snap a photo for this post because I was too focused on eating them. Rarely do I have vegetarian tacos, but seeing how my New Years resolution was to do more meatless meals, I decided to try something different with one of my favorite winter vegetables, delicata squash. I roasted the squash and paired it with black beans, pickled shallots, cilantro, lettuce, pomegranate seeds and sour cream with spices. The recipe can be made vegan simply by removing the sour cream.  So delicious and quick to make!

Ingredients

(enough for 1 really hungry person, or 2 moderately hungry people)

-1 delicata squash

-1 small head of lettuce, chopped

-cilantro, chopped

-pomegranate seeds

-1 shallot, sliced

-1 can black beans, drained and rinsed

-organic corn tortillas

-sour cream

-cumin

-chili powder

-garlic powder

-chipotle seasoning

-1/4 apple cider vinegar

-1 tbs sugar

-extra virgin olive oil

-salt

-pepper

 

Instructions

  1. Heat oven to 425 degrees F.  Peel squash and cut it into 1/4 inch rounds.  Remove seeds, cut rounds into halves and place in a bowl.  Drizzle with olive oil and sprinkle with chili powder, salt, and pepper.  Place on a lined baking sheet and roast for 20-25 minutes.
  2. In a small bowl, combine shallots with vinegar, sugar, and salt for a quick pickling.  Stir every few minutes while the squash cooks.  In a separate small bowl, combine sour cream with chipotle seasoning.
  3. Heat drained black beans in a small saucepan over medium heat.  Add cumin, garlic powder, salt, and pepper. Stir every few minutes until hot.
  4. Heat tortillas on the stovetop by placing them directly on each open burner and toasting over medium heat.  Flip as each side starts to brown.
  5. When squash is done, put tacos together by filling them with sour cream, squash, drained shallots, beans, lettuce, cilantro, and pomegranate seeds.

Exotic Tagine with Spices Recipe

This recipe is for those nights when you want to eat something satisfying and healthy, but have too much on your plate to put too much thought into a meal. Although it’s not a traditional African tagine recipe, it shares some of the elements of one and holds up great as leftovers for a few days. You can go totally meatless with this dish and add extra vegetables, but I’ve made it with ground turkey on one occasion and with ground pork on another and liked both these too. I recommend any of these options. Flavoring is the name of the game with this dish, so make sure your spice cabinet is well-stocked. Ingredients (serves 2 people)

-1 lb. ground turkey or pork

-1 yellow onion, chopped

-4 cloves garlic, chopped

-1 tablespoon of each of the following spices: garlic powder, onion powder, ground turmeric, paprika, ground ginger, cinnamon, ground coriander, cayenne, salt, and ground pepper.

-1 can chickpeas, drained and rinsed

-1 cup uncooked jasmine rice or cous cous

-1 1/2 cups water or broth

-optional: raisins or golden raisins

Instructions

1- Set oven to 400 degrees F. On the stovetop, heat a large, ovenproof skillet over medium-high heat. Once hot, add about 2 tablespoons oil to the pan. Next, add the onion, the fresh garlic, and meat to the skillet. Add all of the spices to the pan, mix in with the meat and onions, and cook until the meat is browned.

2- Add the uncooked rice, chickpeas, and water/broth to the skillet. Add a little more salt, mix together, then place in the oven covered for 40 minutes.

3- That’s it, food is ready! BE CAREFUL after removing the skillet from the oven. It’ll be HOT and I totally burned myself!

Meatless Monday- Rice with Kale and Toasted Cashews

We live such busy lives that we deserve an easy, warm, home cooked meal. So many nights I find myself digging through the pantry looking for an quick dinner.  This rice dish with kale and cashews is great because it’s simple and it offers a little bit of everything- whole grains, protein, healthy fat, and leafy green vegetables. I also love it because it can last a few days, so you only need to cook once and eat three or four times, something that’s ideal for the average busy person.

Ingredients:

-1 cup uncooked arborio rice

-3 cups water or chicken broth

-a couple handfuls of cashews

-1 bunch laciano kale, stems removed and leaves massaged

-1/2 cup chopped onion

-1 tablespoon organic butterunnamed-2

-2 tablespoons extra virgin olive oil

Instructions:

1. Saute onion in oil and butter in a skillet for three minutes.

2. Add rice and stir for two minutes.

3. Stir in 1 cup broth or water. Cook and stir until liquid is absorbed.  Gradually stir in next cup of liquid.  Add kale to rice and mix in.

 

4. When liquid is absorbed, add remaining one cup liquid.  Meanwhile, toast cashews until unnamed-3golden brown, about three minutes.  When the last of the broth/water is absorbed and kale is wilted, add toasted cashews. Serve and enjoy!

Baked Eggs and Asparagus

Need a new, healthy breakfast idea?  If you’re like me and are a lover of eggs, then this recipe is a good way to switch up your morning meal while also getting in a serving of vegetables.   60becc443498900bf0927e22732465a1

This recipe, in my opinion, is super easy to make. Even if I have other stuff to do to get ready for my day, the timing of this meal works perfectly with my morning routine .  When I make this meal my routine is I generally get up and turn the oven on, crack the eggs in a bowl to get to room temperature, let my dog out or crawl back into bed for about 15 minutes, then start cooking once the oven is ready.

This meal is a fantastic meatless option, however, I sprinkled bacon bits on top of mine.  Toasted prosciutto is also delicious.

Ingredients:

-2 eggs, room temperature

-8 pieces of asparagus, snapped into pieces

-salt

-pepper

-oil

-parmesan cheese, freshly grated

-optional: onions, bacon.

Directions:

1. Turn oven to 400 degrees F.  Take out eggs and crack them in a small bowl.

*Note: If you’re cooking bacon, lay bacon out on a foil-lined cookie sheet.  Cook for 15 minutes starting with the oven cool and set for 400 degrees F.

2. Coat gratin dish with olive oil and fill dish with asparagus pieces and chopped onion (optional).  Sprinkle with salt and pepper.

3. Bake asparagus for 10 minutes and remove from oven.  Slide eggs from the bowl on top of the asparagus in the gratin dish.  Bake another 5 minutes.  After 5 minutes the white of the egg should barely look set.

4. Sprinkle cheese over eggs and asparagus.  Cook another 3-4 minutes.
